Recently the lovely lady at Can you stay for dinner? posted a whole article about salads, breaking it down for us unimaginative losers. I highly recommend this easy as pie (who says that? pie is quite difficult… easy as toast, it should be) method of composing salads.
Today, using this magic technique, I combined:
baby spinach leaves
half carrot, grated
half tomato, chopped (no longer lying around! yay!)
some sort of sprouts
pumpkin seeds
and for the sauce:
cream cheese
uhh cream
pepper
and something I cannot for the life of me find the English name for. Like cranberries, but sweet. Bilberries? Whortleberries? Lingonberries! Thank you, boyfriend.
It was crunchy and delicious. Next time around I’m thinking it will be lettuce romaine, eggs, surimi, mandarins and mayo sauce. Omnomnom.
We had this a few days ago: mashed potatoes with roasted pepper. It was called a side dish in the recipe, but sounded very much like dinner to me.
Red bell pepper - roast it. We put it on an electric grill. I think you could sautee it without much difference. Chop.
Potatoes - cook and mash.
Add however much you want of:
butter
plain yogurt
garlic
feta cheese
salt
pepper
herbs (again, we used herbs de provance, the recipe said something else).
Mix the pepper in or sprinkle it on top. Delish. Although I could eat potatoes plain all day and be happy.

The menu on the left has been taunting me with the empty “cooking posts” category. I thought there will be a lot of them, because cooking/eating and drawing are basically the things I do all day. And reading, but let’s not talk about that.
Why am I not bothered with writing any cooking adventures down? Because the things I cook demand no effort (usually), and just a few ingredients. There is no process. Which is exactly what might appeal to some people, so here are some awesome things I made yesterday. I get recipes randomly off the Internet, I’ll try to find their sources and post at the end.
1) Green beans and feta salad. That’s basically what the recipe called for. With a dash of vinegrette. I put in spirally pasta and called it dinner. There were supposed to be some nuts in it too, for interesting texture, I was going to substitute them with almonds but forgot it altogether in the end. So yeah.
Some green beans
Some feta cheese
Some pasta
Mix them.
For sauce:
Some oil
Little drop white vinegar
Garlic clove
Pinch of salt
Pinch of pepper
Pinch of whatever herb you like (I used provencal herbs, the recipe said dried dill)
Pour on “salad”. Scarf it down. Oh yeah - sprinkle with nuts.
2) one ingredient ice cream.
Take over-ripe bananas. Slice and freeze. Blend in food processor, scraping down sides, maybe adding a drop of milk (I used soy), for easier blending. Now you have a super creamy base that doesn’t taste like anything. Add whatever you want. The recipe suggested some peanut butter and cocoa. We did strawberries, although they were frozen and my really cheap and measly processor couldn’t handle it - I had to mush them up in my fingers. Delish, although the kitchen and I looked as if I accidentally blended my fingers in there (No! I want to play the violin!). You can freeze it back up, just take out of the freezer a while before serving, it gets really tough.
Lazy cooking for the win.

Oh look, they also had onion. Worked amazing without it, so don’t sweat.
